Is there a way to just import a list of email addresses as prospects into Infusion? I tried and kept getting the message that I needed a first and last name which I don't have for this list. Any ideas for me on this one?

that's a spam issue. Infusionsoft needs to protect themselves (and all of us) from mail-list spammers - been through this question with several clients. best advice is this: email to your list (outside of Inf.) a compelling offer that entices them to opt-in to an Infusion web form (and collect their name, of course)... IOW, filter your list before putting them into Inf. and have Inf fulfill the request. that may not be what you want to hear, but it is clean and effective.

Since sometimes a list of email addresses CAN be valid opt-ins (we ourselves have done campaigns where we only ask for email in order to maximize lead count), there is another way around this.
You have to create a FIRST NAME and LAST NAME column and 'make up' data for those fields. For example, the value we use for first name is "Friend" and the value for last name could be "No_Last" for instance. After adding those values to your data file you should then be able to successfully import it.
Just make sure, like Greg said, that these are valid opt-ins and you're not going to be putting yourself at risk of spam complaints.
