When a user add a product to the cart it shows the description above the cart - some of my products have massive descriptions and this puts the cart and order details way down the page

You can't change the cart behavior (to turn that field off), but you could swap the Product Description and Product Short Description - so your longer description would go in the "Short Description" (a little unintuitive, I know) - and then you could leave the Description field blank or enter a shorter description.
